Burnt Sugar Noodle Kugel
12-oz package of fine egg noodles
1 tsp. salt
½ tsp. black pepper
½ c. sugar
2 Tbsp. olive oil
2 eggs
Boil the noodles according to the package directions, rinse and drain. In a large metal or enamel mixing bowl, combine noodles, salt and pepper. (DO NOT USE PLASTIC OR GLASS MIXING BOWL)
In a small (1-1.5 qt.) saucepan, heat olive oil and sugar. Cook until sugar melts, turns brown and an orange foam forms on the top. Remove from heat and pour over the noodles! Mix well. Add eggs and mix well.
Clean and dry the pot that you used to burn the sugar. Now heat it again, with a squirt of oil or nonstick spray. Pour noodle mixture into the pot, cover, and cook over a very low flame for 40 minutes. Remove from heat and let cool for 5-10 minutes. Remove kugel from pot, flip over and cook on the other side for another 20 minutes. (This is the traditional stovetop method)
Easy method: Preheat oven to 350. Pour the noodle mixture into a 8x8 pyrex or aluminum baking pan and bake for 45 minutes.
